this is the list I have built so far, additions, corrections and other changes always welcome:
On 20 december:
> Gunboat Tern (Lt Horey), minelayer Redstart (Lcdr Selby, Rtd) and boom vessels Aldgate, Barlight and Watergate were scuttled at Hong Kong
> Soviet s/s Krechet, 2282 tgr, Sergei Lazo, 2975 tgr, Simferopol, 2696 tgr, and Svirstroi, 4769 tgr, were sunk by Japanese air attack at Hong Kong (I will amend this according to the info supplied by the board)
> British ferries Man Kim, 371 tgr, and Man Kung, 371 tgr, were scuttled at Hong Kong.
> British tanker Ebonol, 1158 tgr, 2392 ts, was scuttled at Hong Kong by British forces. The Japanese refloated the tanker and she became civilian s/t Enoshima maru, survived the war and was surrendered at Batavia in 8/45, being restored to the UK and reverting to her old name Ebonol
<> Shipping present at Hong Kong at the time of the surrender and its disposition.
The following ships were captured by Japanese forces at Hong Kong (most of the ships had already been sunk or scuttled prior to capture):
> U.S. freighter Admiral Y.S. Williams, 3252 tgr, under repairs in that port for damage incurred in a grounding that had occurred on 24 September, is intentionally damaged on the 12th to prevent use by the Japanese. The merchantman is salvaged, however and is renamed Tatsutama Maru.
> Chinese s/s Anlee, 1668 tgr,
> s/s Apoey, 2790 tgr,
> s/s Ariadne Moller, 1840 tgr,
> Philippine steamship Argus, 1025 tgr, is captured. Argus is refitted and commissioned in the Japanese Navy as the gunboat Hong Kong maru; sunk by USS Gunnel 6/43
> s/s Cambay Prince, 455 tgr, at Bleak Pier,
> s/s Chengtu, 2219 tgr,
> Philippine steamship Churruca is scuttled.
> Panamanian s/s Daylite, 1976 tgr,
> Panamanian s/s Eldorado, 2180 tgr,
> British salvage tug Ethel Moller, 912 tgr,
> s/s Fausang, 2256 tgr,
> British salvage vessel Frosty Moller, 555 tgr,
> Motor vessel Fook On, 738 tgr,

> Norwegian s/s Halldor, 1515 tgr, renamed Haruna maru for Japanese use.

> U.S. steamship (ex-yacht) Hirondelle, 1243 tgr (also under repairs in the Crown Colony when caught there by the outbreak of hostilities) is captured. Hirondelle is renamed Gyonan maru, sunk 20/2/44, raised, repaired and will survive the war.

> s/s Empire Dragon, 6580 tgr, and Empire Pagoda, 6580 tgr, under construction at Hong Kong were sunk, but were later refloated and restored to service by Japanese forces.
> s/s Empire Lantern, seized while building by Hong Kong & Whampoa Dock Co, launched 8/12/42 and commissioned as the 5588 tgr Gyokurei maru for the Japanese Government, lost 18/12/43
I probably have more, but these are scattered throughout my narratives of events. I'll see about carving them out.
